Malai chaap that melts before you bite. Rumali rotis pulled thin as silk, still breathing tandoor smoke. Coals lit at eleven in the morning and raked out well past midnight - this is where Bengaluru's late-night hunger comes home.
UCV started with a simple grievance: this city slept too early, and its chaap tasted like an afterthought. So we built a kitchen around a live tandoor, hired hands that learned their craft on Delhi's chaap carts, and refused to switch off the flame before the last engineer in HSR closed their laptop.
Every marinade is made in-house each morning. Every roti is hand-pulled to order. And every plate leaves the pass the way our head chef insists it must - hot enough to fog your glasses.
